Coconut oil has been consumed in the tropics for thousands of year. The health benefits from consuming coconut oil are numerous. They include stress relief, increased metabolism which helps with weight loss,increased immunity, proper digestion, and many more benefits including maintaining cholesterol levels.
At one time coconut oil was a favorite in the baking industry because of it's long shelf life and a 76 degree melting point. Most food manufacturers stopped using coconut oil and replaced it with hydrogenated polyunsaturated oils which derive from soy.
Why this change from coconut oil to soy? Because soy is a HUGE cash crop in the U.S. and it's cheaper than Coconut oil.
